Tea Lore & Recipes
It has been said the origin of Afternoon Tea stems from Anna, the seventh
Duchess of Bedford (1783-1857).
She began this ritual when, finding herself extremely hungry while waiting for the huge
after sundown dinner, she ordered servants to bring food.
They of course brought Tea, also Breads, Tarts, Cheesecakes and other
small tidbits while she rested in her room.
She began to invite friends and this tradition of afternoon tea soon became
known throughout the aristocracy of Britain.
Today, England takes tea around 4:00 P.M.

For your own Afternoon Tea, be sure to include savory Tea Sandwiches,
Scones, Spreads, Curds and other freshly-baked goods, and of course,
cozy wrapped teapots full of tea!
     Brewing A Good Pot of Tea
Pour the water onto the tea bags or leaves,
not the other way around.
For stronger or weaker tea, do not vary the
steeping times, instead increase or
decrease the amount of tea.

Cut crusts from bread and spread slices lightly
with butter, mustard or cream cheese.

Cut  sandwiches in varied shapes, triangles,
rectangles and squares, double deckers or
singles, all with a thin layer of
savory meats or spreads.
Or use cookie-cutters for even more variation!

Smoked Turkey or Ham, sliced thin and
spread with our terrific Kream Mustard.

Traditional Thin Sliced Cucumber with cream
cheese and butter. Make sure the cucumbers
are salted and well-drained.
Ideas To Get You Started
Cinnamon Apple Tea Cooler
From Brenda Hyde, Seeds of Knowledge
6-8 Servings
1.5 Cups boiling water --- 3 Tb sugar
6 Cinnamon Apple Tea Bags
1.5 Cups cold water
1 Cup grape juice --- 2 tsp lemon juice
Club soda, chilled
In teapot, pour boiling water over tea bags;
cover and steep 5 minutes.
Remove bags, stir in sugar and cool.
In pitcher, combine tea, water & juices.
Serve in ice filled glasses
with a splash of soda.
Garnish with lemon if desired.
    Pesto & Cream Cheese Spread
Pesto, homemade or store bought.
Good quality cream cheese, softened.
Mix together approximately 1/2 and 1/2.
Adjust to taste and spreading consistency,
pretty as the spread for pinwheel sandwiches.
                      Pinwheels
3 slices soft fresh bread, white, wheat or rye.
For Pesto Spread, white bread makes a nice
contrast.

Trim crusts, lay slices in row, slightly
overlapping. Flatten with a rolling pin, paying
special attention to overlapped area.
Dampen this area if necessary to stick
together. Spread thinly with Pesto Spread
and roll up tightly from short end.
Wrap in plastic wrap and refrigerate until
solid enough to slice into pinwheels, usually a
few hours. Pimiento cheese also makes a
pretty pinwheel sandwich.
Irish Soda Bread
This recipe came after a discussion with Shirley
at the Errisbeg Lodge in Roundstone,
Co. Connemara, Ireland.
Preheat oven @ 375.
3/4 Lb. Plain flour & 1/4 whole wheat flour.
Can be made with all plain flour if you prefer.
1 tsp. Bicarbonate of soda
1 tsp. Salt --- 1 Egg
1 Pint buttermilk
               ________________
Mix all dry ingredients together.
Make a well in the center, add egg and
enough milk to make a semi-soft dough.
Mix with wooden spoon, flatten into a disc
on a floured baking sheet.
Do not overwork dough.
In the traditional Irish way cut a large X in
the top, quartering the bread, about 1/2" deep.
Bake 40-50 minutes, until bread is golden
brown. It will sound hollow.
Egg Salad and Ham Salad are always hits, as is
a Pesto and cream cheese mixture.
